Bangkok is ready to welcome another top culinary master when the celebrated two Michelin-starred Portuguese chef José Avillez will stage his culinary debut at the award-winning Lord Jim’s restaurant at the Mandarin Oriental, Bangkok, from May 24-28.
Considered one of the most celebrated Portuguese chefs, Avillez embraces the culinary traditions and gastronomic soul, his enthusiasm in creativity has no boundaries. He owns five restaurants in Lisbon and one in Oporto, each with a different concept and personality to exemplify his relentless passion in cooking.
His internationally-acclaimed Belcanto restaurant in Chiado, located in the historic heart of Lisbon, was bestowed Michelin stars in 2012 and 2014 respectively, and elected one of the best 100 restaurants in the prestigious “The World’s Best Restaurants List” in 2015. The sophisticated restaurant exclusively caters to 10 tables only, allowing Avillez to execute his very own gastronomic journey, a sensory experience unrivalled to none.
“Portuguese cuisine is based on stories and history, our kitchen is inspired by these regions, from the sea and the countryside to a more urban culture, but it’s not a substitute for the original, it’s an addition to it,” said Avillez. His greatest inspiration comes from traditional Portuguese cuisine; the flavours, the textures, the products and a precision in cooking techniques.
